Apple PuddingThis is sometimes known as “Eve's Pudding”. In the Bible, Eve was tempted by the serpent to eat an apple growing on the Tree of Knowledge of Good and Evil, against God's orders. She then gave some apple to Adam. God was very angry with them both and turned them out of the Garden of Eden.
For the Base
- 1 or 2 large cooking apples
For the Cake Topping
- 2 eggs
- 4oz sugar
- 4oz margarine
- 4oz flour + 1½ tsps baking powder or 4oz self-raising flour
MethodPreheat the oven to gas mark 4, 180 degrees celsius.
Prepare the apples by peeling and removing the cores. If using windfall apples, cut away any damaged bits. Trace any insect to its lair and ask it to leave!
Cut the apples into small pieces and put them into an oven proof bowl. Sprinkle them with sugar (about 1 tablespoonful will be enough).
Prepare the cake topping by mixing the eggs, margarine and sugar in a blender. Pour this mixture into a bowl and fold in the flour. If you don't have a blender, beat the margarine and sugar together in a bowl then add the beaten eggs before folding in the flour. Spread the mixture over the apples and bake for about 30 minutes, or until nicely browned on top.
Serve hot or cold.
